“NINBEN” was established in 1699.
They are the Japan oldest and pioneer brand of Katsuobushi in Japan.
You can buy these product only at flag shop in Nihonbashi or NINBEN web shop which does not ship internationally.
“HONGARE” is the premium quality
Katsuobusi needs fungi to make the quality higher. HONGARE is made with the highest quality procedure, i.e. the process of fungus molding 4 times, and it has the lowest water content for the top quality result.

How to make DASHI soup:
Ichiban Dashi (First soup)
1. 1000ml (33.8 oz) water into a pan and bring it to boil.
2. Add a small amount of water
3. 30g (1 oz) of Katsuobushi flakes into the pan and stop heating as soon as boiled again.
4. Wait for Katsuobushi flakes sank into the bottom of the pan
5. Transfer the soup into another pan/bowl straining Dashi quickly through a dry cloth or kitchen paper
* Ichiban Dashi is suitable for Miso soup, Soba and Udon soup, Chawanmushi (steamed egg custard with various ingredients).
Niban Dashi (Second soup)
1. Put the remains of Ichiban Dashi into a pan and add 1000ml (33.8oz) water
2. Bring it to boil and keep heating at low heat for 10 minutes
3. Transfer the soup into another pan/bowl straining Dashi quickly through a dry cloth or kitchen paper
* Niban Dashi is suitable for Nimono (simmered foods) and Nabemono (hot pot).
Storage:
Keep away from the humidity and pests.
Seal the bag tightly once opened and keep refrigerated.
